Ravioli are Italian dumplings made of pieces of dough wrapping a tasty
filling. They can be found everywhere in Italy and every region has its
own unique dumpling with different names, shapes and fillings.
From meat "Agnolotti" in Piedmont to "Casunziei" filled with beetroot
from the Dolomiti mountains of Veneto, one can tour the whole country
while tasting the different varieties of dumplings. Pumpking
"Cappellacci" and ricotta and spinach "Ravioli" can be enjoyed in Emilia
Romagna, potato and mint cute "Culurgiones" in Sardinia and in the South
of Italy you can also find dumplings filled with fish or even sweet
versions.
Depending on the area and the filling ravioli can have different shapes. From square to round to half-moon, triangle and ring, with some unique ones like Culurgionis (last drawing).
Ravioli can be filled with meat like beef, pork or veal; vegetables like beetroot, pumpkin, spinach or potatoes; cheeses like ricotta or Parmigiano and fish like salmon or seafood.
